Charred Corn Salsa

I am a huge snack-addict.  Although it isn’t particularly healthy, I could go all day picking, from cheese and crackers to chocolate chip cookies.  But one of my all time favorites snacks has to be salsa and guacamole.  My first memories of enjoying being in the kitchen began when I was younger and would make homemade salsa with my dad.  I’d actually jar it in glass Ball Jars then sell them to my family ten dollars a pop, which looking back was a bit expensive! Throughout the years my salsa and guacamole recipes have become a bit more grown-up by adding jalapeńos, charred corn and much more.

Charred Corn Salsa Recipe 

What You’ll Need:

  •  4 Tomatoes
  •  2 Stalks of Fresh Corn
  • Cilantro
  • 1 Green Peppers
  • Jalapeños
  •  2 cloves Garlic
  • 1 Red Onion
  • 1 Lime
  • Salt & Pepper (to taste)

Directions:

1. Heat grill to a medium temperature.  Lightly brush butter onto corn so that it will grill easily.  Season corn with salt and pepper before grilling.  Grill and turn corn occasionally until tender. After grilling, cut the corn off the cob and transfer it to the fridge to cool off.

2. Chop tomatoes, cilantro, green peppers, jalapeños, garlic, and red onion.

3. Mix all ingredients, including chilled corn, into a large bowl.

4.  Once all ingredients are mixed together,  add lime juice and salt to taste.
